JOB SUMMARY

Plans and monitors the preparation of food in accordance with current applicable federal, state and local standards, guidelines and regulations, within established policies and procedures, and as may be directed by the Director of Dining Services, to assure that quality food is provided at all times.

ESSENTIAL FUNCTIONS
  • Plans, develops, organizes, implements, and directs the kitchen to ensure that menus and their preparation are completed timely and within established facility guild lines.
  • Monitors and directs assigned staff in processes related to effective kitchen operations.
  • Assures that the kitchen is maintained in a clean and safe manner, and that sufficient number of staff are on hand to assure quality food in a timely manner.
  • Conducts employment interviews, makes recommendations regarding hiring and termination, discipline, and transfer of employees.
  • Performs administrative requirements such as completing necessary forms, reports, etc. and submits to the Director of Dining Services as required.
  • Coordinates Kitchen Services with other departments as necessary.
  • Assures that all dietary procedures are followed in accordance with established policies.
  • Assures the development of methods for determining quality and quantity of food served.
  • Plans and implements standards for the methods in which kitchen work will be accomplished.
  • Assumes the authority, responsibility, and accountability of Executive Chef.
  • Attends department staff meetings.
  • Meets with Dining Services personnel, as necessary to assist in identifying and correcting problem areas and/or the improvement of services.
  • Develops and maintains a good working rapport with inter-department personnel, as well as with other departments within the facility, to assure that food services can be properly maintained to meet the needs of the residents.
  • Delegates authority, responsibility, and accountability to other responsible Kitchen personnel.
  • Assures that department personnel, residents, visitors, etc., follow established Kitchen Services policies.
  • Plans and monitors established food service production lines to assure that quality meals are prepared on time.
  • Plans, implements, and monitors food preparation in accordance with sanitary regulations, as well as with our established policies and procedures.
  • Assists Dining Service Director in maintaining the Dining Services Department in a safe and sanitary manner.
  • Assures that food storage areas are clean and properly arranged at all times.
  • Attends all mandatory in-services.
  • Assumes responsibility of the department in the absence of the Dining Services Director.
  • Other duties as assigned.

Requirements

SKILLS, ABILITIES AND EXPERIENCE
  • Extensive knowledge of menu/food preparation and food combinations.
  • Verifiable experience in food service for a large group.
  • Ability to work with personnel in the Dining Services Department.
  • Knowledge of Department of Health regulations, OSHA and other public regulatory agencies a plus.
  • ServSafe certificate needed.

EDUCATIONAL REQUIREMENTS/LICENSES/CERTIFICATES

Any combination of education and experience that would provide the necessary knowledge and abilities listed, typically:

  • Certification or graduate from recognized culinary institution
